Ingredients:
- 4 large portobello mushrooms
- 1/2 cup of quinoa
- 1/2 cup of vegetable broth
- 1/2 cup of shredded carrots
- 1/2 cup of chopped spinach
- 1/2 cup of diced red onion
- 1/2 cup of diced bell pepper
- 1/2 cup of diced celery
- 2 cloves of garlic, minced
- 1 tbsp of olive oil
- 1/4 tsp of salt
- 1/4 tsp of black pepper
- 1/4 cup of grated parmesan cheese
- 1/4 cup of panko breadcrumbs
Instructions:
- Preheat the Tovala oven to 400°F.
- Remove the stems from the portobello mushrooms and use a spoon to scrape out the gills from the underside of the mushroom caps.
- In a small saucepan, bring the vegetable broth to a boil. Add the quinoa and reduce the heat to low. Cover and simmer for 15-20 minutes, until the quinoa is fully cooked.
- While the quinoa is cooking, heat the olive oil in a large skillet over medium-high heat. Add the garlic, red onion, bell pepper, and celery. Cook for 5-7 minutes, until the vegetables are tender.
- Add the shredded carrots and chopped spinach to the skillet and cook for an additional 2-3 minutes.
- Once the quinoa is fully cooked, fluff it with a fork and add it to the skillet with the vegetables. Mix well and season with salt and black pepper.
- Divide the quinoa and vegetable mixture evenly among the four portobello mushroom caps, filling them to the top.
- In a small bowl, mix together the grated parmesan cheese and panko breadcrumbs. Sprinkle the mixture over the top of each stuffed mushroom.
- Place the stuffed mushrooms on a baking sheet and place in the Tovala oven. Cook for 12-15 minutes, until the mushrooms are tender and the topping is golden brown.
- Remove the stuffed mushrooms from the oven and let cool for a few minutes before serving.
This recipe makes four servings of delicious and healthy portobello stuffed mushrooms.
